New Spice of the Month: Star Anise
Used in many varieties of Sambuca, Pastis, and Abstinthe, star anise enhances the flavor of meats, especially in flavoring for roast chicken, braised fish, scallops, and clear soups. It has a pungent liquorice-like and distinctive sweet smell. Medically it has been used in tea for a traditional remedy for rheutmatism; chewing the seeds can aid digestion.
The pungent smell makes me nervous to add it to my dishes, but I’m excited to experiment. Now all I have to do is find some recipes!
